Most rentals are not paid in one go. A typical sequence is a reservation fee, then the balance
on pickup, plus a deposit. Three transactions for one booking.
Record them as three payments against the same booking, not as one payment you keep editing.
The running total is then a fact you can look at rather than arithmetic you redo each time, and
"how much is still owed" stops being a question.
